2022 Pouilly-Fuissé 'Grands Terroirs Oubliés', Maison Verget

Vinification: A blend of the ‘forgotten’ top vineyards ‘Haut de la Roche’, ‘La Côte’, and ‘Les Vernays’, with some of the premier cru ‘Les Crays’. 100% hand-harvested Chardonnay that has been aged on the lees.

Tasting Notes: Initially fresh with citrus fruit and fine acidity, followed by notes of salty butter caramel and rich yellow fruit.

Serving Suggestion: From 2025 through 2034, 10-12°C.

Food Pairing: Ideal pairings include lobster, grilled fish with creamy sauces, roasted chicken with herb butter, and soft, creamy cheeses.

2018 Pauillac - Cru Bourgeois, Château La Fleur Peyrabon

Vinification: Primarily crafted from Cabernet Sauvignon, with smaller amounts of Merlot and Petit Verdot. The grapes are hand-harvested and carefully sorted before fermentation. The wine undergoes maceration to extract deep color, flavors, and tannins. Aging takes place in French oak barrels, around 30% of which are new, for about 12 to 14 months. This process enhances the wine’s structure and complexity, allowing the fruit to develop alongside subtle oak influences, resulting in a balanced and elegant wine with rich, dark fruit and spice notes.

Tasting Notes: This Cabernet Sauvignon-dominated wine has power and delicious ripe black fruit such as blackberries and cherries. The structure is beautiful, wonderfully wrapped in rich dark fruit. Some bay leaf and subtle spices, like clove and licorice.

Serving Suggestion: From now until 2032, 16-18°C

Food Pairing: Great with a tomahawk steak on the Green Egg, served with corn and baked potato.

2022 Côtes de Nuits-Villages, Domaine David Duband

Vinification: The vines for this Côtes de Nuits Villages are 45 years old. The limestone-rich soil offers excellent drainage, promoting fast ripening. The wine is aged mainly in older barrels.

Tasting Notes: Blueberries, black pepper, and leather. Powerful with good structure, wrapped in ripe dark fruit. The finish is fresh and long.

Serving Suggestion: From now until 2034, 15-17°C

Wine and Food Pairing: Excellent with beef roll with sweet potato, carrots, and onions roasted in the oven.
